Watermelon Feta Mint salad is such an easy summer dish - perfect for barbecues, picnics, or just a refreshing snack. I first heard of the combination from several chef articles last year and a Nigella Lawson piece on NPR (love her!), all seemingly within the same week. I was hesitant, but had all the ingredients handy, so tried it out and then couldn't get enough. I preached about the virtues of this salad to all my friends, who just thought I was weird.
Yesterday, I was invited to a Memorial Day cookout and made the dish for people other than myself for the first time. It went over very well!

- Seedless watermelon - I used one grown locally. Most salads show it in cubes, but I never get a chance to use my melon baller, so I went that route. I thought it looked cute.
- Feta - I chose Pure Luck Dairy's Goat Feta.
- Fresh mint - picked right out of my herb garden.
Some Watermelon Feta salad recipes call for sweet onions, olives, pepper, olive oil, basil - I haven't experimented with them yet, with the lazy summer days ahead, this is as complex as it needs to be.
