Reading Raclette is a nutty, washed rind cheese from Spring Brook Farm in Reading, VT. This is the same farm that makes the #7 cheese Tarentaise. This Alpine-style cheese is a great example of a traditional French/Swiss cheese made in the US. Reading Raclette is best melted, especially if you have a raclette apparatus. If you don't have plans to visit the Alps or have one of these bad boys at your disposal, don't fret! You too can experience a traditional raclette service at the Houston Dairymaids.
